Pineapple and Date Slice

Grease a 26cm x 32cm tin

Heat oven too 180c

 

Ingredients

2 cups self raising flour or (wholemeal if preferred)

½ cup desiccated coconut

1 cup brown sugar

175g butter

 

If doing a vegan alternative use:

3 cups rolled oats done in the blender or food processor

I cup coconut

1 cup wholemeal flour

1 cup of orange juice instead

Mix dry ingredients in a bowl and add juice to bind together

 

FILLING

3 cups chopped dates

½ cup orange juice

2 cups crushed pineapple and juice

1tsp vanilla

 

Mix together and simmer until thickened and smooth.

Sift flour into bowl, stir in coconut and sugar. Rub in butter until the mixture is crumbly. Press half the mixture into the prepared pan.

Spread with filling and top with remaining mixture pressing down lightly. 

Cook in a moderate oven, 180c for 30-35 minutes or until cooked. Cool in tray.
